Apellation by tradition.
Enologist/Winemaker: STELIOS KECHRIS
Varietal composition: Roditis, Savatiano
Region: N.Messivria of Thessaloniki.
Vineyard: On lines, pruning guyot, 13ha.
Soil: Of argil
Climatic conditions: Green winter with hot summer.
Harvest: 10-20 September, which depends on climatic conditions.
Vinification: Elision, soft pressure, "debourbage", addition of small quantities of selected resin, and fermentation at controlled temperature 18-20 C in stainless steel tanks. Ageing: Two months in stainless steel tanks on its lees Bottling: At the end of November.
Average annual production: 120.000 bottles.
Since: 1954
Analytical elements:
-Alcohol content: 11,5% vol
-Total acidity: 4,8 g/l (as tartaric acid).
Organoleptic characteristics: It offers an exceptional balance of resin and fruit in aroma and taste in a freshness and coolness background.
Awards:
Golden Medal: Thessaloniki International Wine Competition, 2003. Bronze Medal: Thessaloniki International Wine Competition, 2001. Silver Medal: Thessaloniki International Wine Competition, 1999. Served: Ideal companion of roasted and spit meats, fishes, oil-cooked meals, of fry and of anchovy, of feta-cheese with oil and pepper, halva and many other dishes. It is a necessary addendum of the traditional table at 8-10 C.
It turns to be a highly personalised quality wine that justifies the greek tradition.
